Savory Oatmeal Muffins

Oatmeal is one of our favorite breakfast foods. As a whole grain it has a wonderful nutritional profile and a mild, savoury flavor to it. These muffins aim to keep that mild taste, only incorporating 1/4 cup of sugar and spices to add a touch of delish. If you’re used to muffins with more sugar, these may seem a bit bland, so you can increase the sugar to 1/2 cup, but if you’re looking to cut back on sugar overall, try to stick to the 1/4 cup. Vanilla powder is something we’ve started using recently. True vanilla extract is quite pricey and for us, not giving enough flavor. The vanilla powder at the store was roughly comparable in price and amount to the extract, but you don’t need as much powder in recipes. If you only have extract, add 1 tsp. vanilla extract for this recipe.

Ingredients:

  • 1 cup oats (Rolled oats preferred)
  • 1 cup flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. vanilla powder
  • 1 egg, beaten
  • 1 cup milk or soymilk
  • 1/4 cup. vegetable oil

Equipment:

  • Measuring cup(s)/spoons
  • Sturdy wooden spoon
  • Mixing bowls x 1
  • Muffin pan
  • Rolling pin
  1. Preheat the oven to 375F. Line a 12-muffin pan with grease or non-stick spray or silicone muffin cups.
  2. Dry ingredients: Mix the oats, flour, sugar, baking powder, cinnamon, ginger, and vanilla powder in a mixing bowl well. You want it pretty nicely mixed before you add the wet ingredients. Make a well in the center of the dry ingredients.
  3. Add the beaten egg, milk (or soymilk) and vegetable oil into the well. Gently fold and mix the wet and dry ingredients together. Incorporate it completely but don’t overmix or beat really quickly. Fill the muffin cups 1/2 to 2/3 full. Bake at 375F for 20 minutes and enjoy!
