Triple Berry Muffins Recipe

Muffins are a tasty snack that is pretty easy to make at home. Though this is a triple berry muffin recipe you can decrease the diversity of berries to just one or two if that is your preference. The berries give a good range of flavor and aid in the overall sweetness.

Cooking Time: 20 minutes

Servings: 12

Ingredients:

  • 3 cups flour
  • 2/3 cup white sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. vanilla powder
  • 1/2 cup butter, melted and slightly cool
  • 1.5 cups milk or soy milk
  • 2 eggs
  • 1.5 cups mixed berries such as blueberry, strawberry, raspberry, etc

Equipment:

  • 12-muffin baking pan
  • Mixing bowl x 1
  • Wooden spoon x 1
  • Measuring cups
  • Measuring spoons
  • Silicone cups for lining the muffin pan or non-stick spray
  • Knife and cutting board
  1. Preheat the oven to 375F. Spray or line a 12 muffin baking pan. Measure out and mix the flour, white sugar, baking powder, baking soda, and vanilla powder in a mixing bowl.
  2. Slice large berries such as strawberries into smaller pieces. Large raspberries can be cut in half; set aside berries for adding last. Melt the butter and let it slightly cool. Make a well in the center of the dry ingredients. Add the 2 eggs, milk, and butter and mix until combined. Fold in the berries.
  3. Scoop batter into the muffin pan evenly among the 12 cups. Bake at 375F for 20 minutes. Allow to cool and enjoy! Goes well with a bowl of oatmeal.
